Today, I would like to share my special calzoni recipe with you. I used some left overs to stuff the calzoni. This is delicious!
Ingredients
1 Red Bell Pepper
1 big Onion
1 cup Feta Cheese
8oz Sliced Mushrooms
2 minced garlic cloves
3 or 4 chopped Basil Leaves
Salt
Pepper
1lb Pizza Dough ( you can buy it or you can make it yourself, follow my recipe)
Preparation
Drizzle olive oil on a frying pan.
Add the diced onion, diced pepper, and the sliced mushrooms
Add the salt, pepper, garlic, and chopped basil leaves
(I used the frozen basil that I saved in the ice cube container when i made the pesto)
Stir and cook it for 7 minutes
Divide the dough in 4 pieces
Make 4 circles with the dough using your hands or a rolling pin
Add some of the sauteed vegetable to each of the dough circles
Sprinkle with feta cheese and fold them in the shape of a half moon.
Lay the calzones in a sheet pan
Bake them at 400-450F for 20-25 minutes
Remember, that you can use any kind of stuffing that you would like, but this was a creation from my left overs.
