Tarallini al Finocchietto

Tarallini are little baked flour rings as you see on the picture. They have a delicious fennel taste and it is a great treat with a glass of wine.

Ingredients

2 lbs All Purpose Flour
1 cup Extra Virgin Olive Oil
4 large Eggs
1 oz (25grams) of Cake Yeast
2tsp Salt
3/4 cup of Fennel Seeds
Dry White Wine

Preparation

Put the flour on the working table.

Make a well with the flour and put  the eggs, the sugar, and the oil in the center.

Melt the yeast cake in 1/3 of a cup of water, and add it to the well.

With a fork start beating the eggs from the center of the well and slowly combine the fennel seeds, olive oil, and salt.

Now start working the dough with your hands as if you were making lasagna or pasta .

As you are mixing it, add the white wine a little at the time until you have a firm dough.

If you are not familiar mixing it with your hands (this is the old-fashion way of doing it),  put all the ingredients in an electric mixer and mix it all together.

When you have a nice firm dough, cut it in small pieces and roll it until you get 6-inch long and quater thick strip.

Lay the stripes on sheet pan, about 1/2 inch apart.

In a separate cup, put some extra virgin olive oil, and a pinch of salt. Mix it together

Brush the strips with the olive oil mix.

Bake it at 350F for 15minutes or until golden brown.
