This is a delicious and healthy side dish. The video below will explain it to you in details. It is very easy to make.
Ingredients
2lb Dandelions
3 whole Garlic cloves
Crushed Red Pepper (optional)
Lemon
extra vergin olive oil
salt pepper
Preparation
Clean the dandelion cut in 3 inc long , wash and drain it
In the meantime, bring a pot of water to a boil
Add the dandelion and salt
Cook it for 5- 7 minutes
Drain the dandelion, it will shrink in size significantly
In a pan, put some extra virgin olive oil
Add the garlic cloves in “camicia” (with the skin on)
Add the crushed red pepper if desired
When the oil is hot and has absorve the flavors from garlic and red pepper, add the dandelion
Add salt and pepper to taste
Saute it for 3 to 5 minutes at low heat. Mix it all together.
Put the dandelion in a serving plate and garnish with lemon wedges
