Bolognese Sauce

This is a meat sauce. This sauce is delicious with tagliatelle pasta, then you’d have Tagliatelle alla Bolognese. You can also use it with your home made pasta (see picture on left) or with Rigatoni, Schiaffoni which are much bigger than Rigatoni. It’s all very good.

Ingredients

2lb Ground Meat ( 1lb Pork, 1lb Beef)

1 Onion

2 Carrots

3 Celery Staks

2 large cans Tomato Sauce

1 can San Marzano Peeled Tomatos

Fresh basil

2 Carrots cut in half

1 cup Red Wine

Salt

Pepper

Extra Virgin Olive Oil

Preparation

Start by grinding the carrots, onion and celery staks.

In a pan, add some extra virgin olive oil, let it get warm

Add the carrot, celery, and onions.

Saute for 5 to 10 minutes or until the onions are translucent.

On the side, mix the meat in a bowl

Add the meat to the pan with the onions

Add salt, and pepper

Stir, cover and cook it at low heat for another 20 minutes

Add the wine and turn to high heat to allow the wine to evaporate.

Mix the meat with a wood spoon.

Add the tomato sauce and switch back to very low heat

Add the fresh basil leaves, and the carrots cut in half

Let it cook for 1 hour. Keep stirring every 1/2 hour

If the sauce is too dry, add 1/2 cup of water and let it cook.

The length to cook a good meat sauce is about 2 hours .

When done remove the basil and the carrots.

That is it. The sauce is ready to be served with your pasta.

Note: When you bring your pasta on the table, I recommend never to put the parmiggiano cheese to top.  Serve the parmiggiano cheese on the side not in the pasta .
