This dish has a nice delicate taste. It goes really well with a fresh salad.

Ingredients
8 Shrimp Scampi
2 cloves Garlic
8 tbsp Cognac
1 cup Bread Crumbs (Italian bread grind in the food processor)
2 tbsp Parsley
Extra Virgin Olive Oil
Salt
Pepper
Preparation
For the bread crumbs, I use hard Italian bread and I chop it in the food processor.
Add the bread crumbs to a bowl and
add salt, pepper, extra virgin olive oil, and finely chopped parsley.
Wash the scampi, remove the legs with the scissors.
Make a cut to the top of the scamp.
Stuff it with the bread crumb.
Drizzle the top of the scampi with extra virgin olive oil.
Place the scampi in a oven pan. Turn the oven on 350F.
Bake it for 20 minutes.
Add 1 tbsp of cognac to each scampi.
Continue cooking for another 15 minutes.
