Pizza di Patate (Potato pie)

This is an Italian Potato Pie without a crust. I learned this recipe from my mother-in-law. She was from the Molise Region in Baranello, Italy. This recipe is very easy to make. It is similar to making mashed potatoes. It is a perfect recipe for dinner or for entertainment.
Serving: 10-12 people
Ingredients
5 lbs Idaho Potatoes
1/2 lb Ham
1/2 lb Mortadela
1 lb Mozzarella Cheese grated
1 cup Pecorino Romano Cheese
1/2 cup Parmigiano Reggiano
10 Eggs
1 stick unsalted Butter
pinch of Salt
Pepper
Preparation
Boil the potatoes for 1 hour. I like to boil the potatoes with the skin and peel off the skin once the potatoes are cooked. That is how I learned from my grandma. However, for simplicity, you can peel the potatoes before you cook them.
Smash the potatoes like you are making mashed potatoes. On the warm potatoes, add the stick of butter, and a pinch of salt. We don’t want to use too much salt with this recipe, because the ham and cheese will give the flavor.
In the separate bowl, beat the eggs. Add it to the potatoes.
Cut the ham and the mortadela in squares, and add to the potatoes. If you have dry sausage in your refrigerator, you can also dice it and add it to the mix. This step is optional.
Add all 3-cheeses to the potatoes.
Mix it all together.
Coat an oven pan (9″ x 13″) with butter. Sprinkle the bottom of the pan with bread crumbs.
Add the mix to the oven pan, press it down to make it nice and even. Once you are done, sprinkle with additional bread crumbs on top. Spread the bread crumbs all over.
Make little square holes with the fork on top of the pizza di patate prior to baking.
Bake it for 1 hour at 350 degrees until golden brown.
