Panini di Melanzane (Eggplant Sandwich)

This is a fun way of eating eggplants. This is a perfect side dish or nice lunch. This recipe will make 8 eggplant sandwiches.

Serving: 4 people

Ingredients

1 large Eggplant

1/3 cup Flour

2 Eggs

8 slices cooked Ham

8 slices Mozzarella Cheese

8 leaves of fresh Basil (Optional)

8 slices of Tomato

Oregano

Salt

Pepper

Oil for frying

Preparation

Cut the eggplant in round – 1/4 inch thick.

Make sure you have even sized slices.

Beat the eggs.

Coat each eggplant slice in flour and into the beat egg.

Fry each eggplant slice in hot oil until golden brown

Place each eggplant slice on a papper towel

Lay a slice of ham, a slice of tomato, a pinch of oregano, a slice of basil (optional), and a slice of mozzarella cheese (in this order) on half the the eggplant slices.

Top each slice with another slice like a sandwich

Bake it on a sheet pan at 350F for 15-20 minutes.
