Mesclun Green with Balsamic Citrus Vinaigrette

This is another one of the many healthy refreshing salads I make at work. I hope you enjoy it.
Ingredients:
Mix Greens 2 cups per person
2 oranges (juice from 2 fresh oranges)or 1/2 cup of orange juce
1/4 cup Lemon Juice
1/4 cup White Balsamic Vinegar
2 small Shallots
2 cloves Garlic
3 leaves Basil
2 tbs Honey
Salt
Pepper
Extra Virgin Olive Oil
Preparation
In a food processor, put the shallots, the garlic and mix them together.
Add the basil and mix for about 2 minutes.
Add vinegar, lemon, orange, honey, salt, and pepper in the food processor.
Mix all the ingredients for another 2 minutes.
very slowly add the extra virgin olive oil.about 1 cup
Set the dressing aside. If you are not going to make the salad right away, keep the dressing refrigerated.
In a bowl, put the greens and a small amount of the dressing.
Mix the greens. Add the dressing if needs. Be sure not to wet the greens too much.
Move the greens to the serving plates, add fresh pieces of oranges on each plate. If you like you can also add some mandarine oranges or slices of lemon.
Garnish with slices of oranges.
