Left over Vegetable Pasta

This pasta is very versatile.  You can use any sort of left over vegetable.  One night, I was struggling to figure out what to cook for dinner, but I had some vegetables in the refrigerator. So I came up with this delicious pasta dish. Try it !!

Ingredients

1 Zucchini

1 Red Bell Pepper

1 cup Grape Tomatoes

2 cloves Garlic

Parsely

Basil (for garnish)

Crushed Hot Red Pepper (optional)

Extra Virgin Olive Oil

Salt

Pepper

Preparation

Boil water for the pasta, once the water is boiling add the salt and the spagetthi

In a pan, add the extra virgin olive oil, the garlic, the hot pepper.

Saute it for a minute.

Add all diced vegetables (zucchini, peppers, tomatoes), salt and pepper to the pan

Add chopped parsely

Stir it all together and saute for another few minutes ( 8 – 10 minutes)

Remove the garlic cloves from the pan, drain the pasta, and add it to the vegetable pan

Mix it all together

Transfer in the servicing dish and garnish with basil. If you would like it you can serve it with Parmesan cheese.
