Italian Antipasto

This antipasto is an American creation. In Italy, we serve cheese, meat and the vegetables separately in a platter instead as the antipasto. However, when I moved to America, I noticed that this dish was referenced as Italian Antipasto. The recipe below is based on what I have learned in the United States.

Ingredients

1/2 lb Ham

1/2 lb Salami

1/2 lb cubed Cheddar Cheese

1/2 lb cubed Swiss Cheese or Provolone Cheese

1 can Artichoke Hearts

Pitted Green Olives

Pepperoncini peppers (optional)

3 Red Bell Peppers roasted

1 jar Pickel Round Peppers

Dried Oregano

Extra Virgin Olive Olive

Preparation

Cut the ham and salami in squares of about 1/4″ thick.

In a bowl, add the cut ham, salami, and the cheeses.

Cut the roasted peppers in strip.

Add the roasted peppers, olives, round peppers, dried oregano, Pepperoncini, and artichoke hearts to the ham.

Add a little bit of the dressing for the canned vegetables (round peppers, artichoke hearts, olives, etc)

Toss it all together.

Chill for at least one hour.

Garnish with a dust of dried oregano.
