Green Beans, Sweet Potato and Mango Salad

I learned this recipe in my current job. I was searching for a nice and refreshing healthy salad. I hope you enjoy it as much as all of my co-workers already did.
Ingredients
1 pound of green beans
1.5 pound of sweet potato
1 cup of diced mango (fresh or frozen)
1/4 cup chopped green onions
3 tbsp of apple cider vinegar
1/4 cup extra virgin oil
2 tbsp of chopped fresh cilantro
Salt and pepper to taste.
Preparation
Boil the green beans, drain them and set them aside. Boil the sweet potato. Check if the sweet potatoes are done by sticking a fork in them. If the potatoes are not hard, then they are done.
Peel the sweet potatoes and slice them. Mix to the sweet potatoes, the diced mangoes, green beans and green onions.
In another bowl, whisk the cider vinegar, the extra virgin olive oil, salt and pepper. Add this dressing to the green bean and sweet potato mix. Springle with fresh cilantro and serve.
