Scallops and Shrimp in Martini glasses

This is an elegant and delicious appetizer. Try making it for your parties and it will be a success among your friends and family! In this recipe, I use scallops and shrimp, but you can also serve it with any variety of seafood of your choice.

Serving: 6 people

Ingredients:

18 medium sized scallops

18 medium sized uncooked shrimp

2 cloves garlic

1/2 pint grape tomatoes

1 bag (6oz) fresh baby spinach

1/2 cup white wine

3 tbsp parsley

4 tbsp extra virgin olive oil

Preparation:

The first thing we need to do is to wash the scallops and the shrimp in cold water. Remove the skin and the tail from the uncooked shrimp and put it aside.

Add the extra virgin olive oil to a pan in medium-high heat. Chop the garlic and add it to the pan.

Cut the grape tomatoes in half and add it to the pan. Add 2 tbsp of chopped parsley. Saute them together.

Cook it for about 5 minutes.

Add the scallops, the shrimp, salt, and pepper. Saute them together and let it cook for 10 minutes.

Turn the heat to high, add the white wine. Leave the heat in high until the wine evaporates.

Add some baby spinach leaves in the martini glasses, add the 6 scallops and 6 shrimps in each martini glass and pour some sauce. Garnish each glass with half of the grape tomatoes and parsley.
