Bucatini all’Amatriciana

Bucatini_ all_AmatricianaThis is a quick delicious dinner that can be done after a long day at work.

Ingredients

Serving: 4 people

1 lb of Bucatini pasta

1/2 lb Pancetta (Italian bacon) sliced thick and diced

1 onion

1 large can (28 oz) of crushed tomatoes

3 basil leaves

4 tbsp extra virgin olive oil

Preparation

Saute the onions in the extra virgin olive oil. Add the diced pancetta. Let it cook in low heat for 5 minutes or until the pancetta is cooked. Add the tomatoes, basil, pepper and a pinch of salt. Stir them together and cover it. Cook it for 20 minutes. While it is cooking, boil a pot of water. When the water is boiling add salt and the bucatini pasta. Cook the pasta al dente.

Drain the pasta, and mix it with tomatoes sauce. Stir it all together and serve it. Sprinkle the dish with basil for garnish.  I suggest some pecorino romano cheese to go with it. Please don’t forget the red wine!
