Pollo (Chicken) alla Romana

Chicken Romana is a plate with tomatoes and red bell peppers. I also think is a very different way to eat chicken. When you cook it, your kitchen will smell so good hmmm.  Before we get started, open nice bottle of red wine.  Alla salute and now let get to work…

Serving: 5 people

Ingredients

1 chicken of about 2  1/2 pounds

1  big onion diced

1 carrot grated

2 celery stalks grated

1 glove of garlic

A bunch of chopped parsley

2 cups of peeled tomatoes  ( San Marzano )

2 red bell peppers sliced

1 cup white wine

salt

pepper

4 oz extra virgin olive oil

Preparation

Cut the chicken in 10 pieces. So, you have 2 legs, 2 drumsticks, 2 wings, and 2 breasts. Cut each breast in half, so now you have 4 pieces out of 2 breasts. Wash the chicken very well and dry it. In a pan, add the extra virgin olive oil, let it be a little warm,  add the diced onion, the grated carrot, and the grated celery. Saute the vegetables for 3 minutes.

Add the glove of garlic, the chicken, salt and pepper. Let it all cook for 1/2 hour.  Turn the heat high, pour the wine  and let it evaporate for 1 minute. Then turn the heat low, add the peppers, the tomatoes, and parsley. Cook for another 1/2 hour .

My suggestion is to serve this dish with a nice mix leaf green salad, just a splash of red wine vinegar, a drizzle of extra virgin olive oil, a sprinkle of green onion, salt and pepper. Don’t forget a nice slice of Italian bread and a glass of wine!
