Meat Sauce with Pancetta (Bacon)

This sauce is perfect with Polenta with Meat Sauce recipe or any kind of pasta. This is a plain sauce because only takes one kind of meat (bacon). However, it adds a lot of good flavor to your pasta dishes. It also makes for a great Sunday Sauce as it usually follows a meat entre (in Italy).  This sauce can be frozen to be used in recipes as needed.

Ingredients

2lb Pancetta di Maiale (Fresh Pork Bacon)
1 Onion
1 whole Carrot
2 cans Italian Tomato Sauce
1 cup White Wine
Extra Virgin Olive Oil
Salt
Pepper
Basil leaves

Preparation
In a pan, add the extra virgin olive oil and the diced onion.
Let is saute for a few minutes, until the onion is translucent.
Cut the pancetta (or fresh bacon) in large pieces.
Add the pancetta to the onions.
Add salt and pepper to taste.
Stir it, cover it and let it cook for 30min.
When the pancetta is cooked, add the white wine.
Let it evaporate in high heat.
Add the tomato sauce to the pan.
Stir it very well
Add the peeled whole carrot, and basil leaves. If needed, add salt.
Keep checking the sauce, if it is too dry, add 1/2 glass of water.
Cover the pan and let it boil at low heat for 1 hour.
