Almond Cookies – Amaretti

This is another recipe in the series ‘Cooking with La Mamma di Mamma di Pino’. This is an authentic pastry recipe from my mom (la mamma di mamma di pino 🙂  I went to visit my mom in Italy this summer. We spent a lot of time in her kitchen making desserts like the old days.  Amaretti is a very traditional pastry for the holidays in Italy. Can you believe this recipe has no flour?

Ingredients

4 Large Egg Whites

3.5 oz (100 grams) bitter Almonds (finely grind)

14 oz (400grams) Almonds (grind but not so thin, you need to see little pieces of the nut)

10.5 oz (300grams)  Sugar

Preparation
Beat the egg whites, but not too firm

Add the sugar and beat it with the mixer

Add all the finely ground bitter almonds.

Mix it with a spoon

Add 14 oz (400 grams) of the ground almonds

Mix it with the spoon.

When all is mixed well and you don’t see the white of the eggs, make little balls with a spoon.

Coat each amaretto with sugar.

Lay them on a cooking sheet.

Place them 1 inch apart from each other

Bake them on 350F for 15 minute.

Make sure they don’t get too dark because they will get dry
