Trout with Lemon

This is a great summer light dinner. It tastes amazing!

Ingredients

1 whole Trout

Lemon

Parsley

Olive Oil

Salt

Pepper

Aluminum foil

Preparation

Wash the trout throughly.

Place the trout on a sheet of aluminium foil

Coat fish with olive oil

Add salt and pepper to the trout inside and out.

Sprinkle some olive oil also inside the fish

Slice the lemon

Place two slices inside the trout and two slices on top.

Add some string of parsley inside the fish

Wrap it like a candy

Place the trout on the sheetpan

Bake it on 350F for 20 minutes

When done transfer the trout on a serving place.

Remove the parsely, garlic and lemon from inside and out

Cut a fresh edge of lemon and serve it.

I would serve it with the side arugula salad dressed with fresh squeezed lemon juice, extra virgin olive oil, salt and pepper.
