Sausage with Peppers & Eggs

This is the perfect recipe for brunch. In Italy, this is common for breakfast meal. You can also have it for lunch. It makes an excellent sandwich.

Serving: 4 people


1 lb Sausage cut into pieces (1/2 inch wide)

8 Eggs

1 large Onion

2 Red Bell Peppers cut in stripes

1/2 cup dry White Wine

5 tbsp Parmigiano Reggiano

Bunch of fresh Italian Parsley

Extra Virgin Olive Oil




In a pan with extra virgin olive oil, saute the sausage.

Cook it until the sausage is fully cooked. Set it aside on the plate.

In the same pan, drizzle with some extra virgin olive oil.

Add the sliced onions to the pan and caramelize it.

Add the red bell pepper cut in stripes, add salt and pepper.

Stir and cook it for 5 minutes.

Add the white wine to the bell peppers and onions.

Deglaze the pan with the wine.

Cook it all together until the onions and the red bell peppers are soft

Take the sausage and add it to the red bell peppers.

Stir them.

Beat the eggs on a separate bowl.

Add the cheese and chopped parsley to the egg mix

Pour the eggs into the sausage and stir it. Cook it as you were making scramble eggs.

Add the eggs to a platter for serving. Garnish with chopped parsley.
