Pasta e Cavolfiore al Zafferano (Pasta with Cauliflower)

1 Cauliflower

1 pound of Pasta

1 medium Onion

2 tsp saffron





Bring a pot of water to boil and add the cauliflower. Boil the cauliflower for 15 minutes.

Drain the cauliflower, but save the water in a bowl separately.

Saute  the onion with 1/4 cup oil in a pan.

Add the cauliflower and a cup of the water to the onions. Let it simmer for 5 to 8 minutes.

In a cup, put the saffron with 2 ounces of  warm water. Melt the saffron.

Pour the saffron to the cauliflower and simmer for 5 minutes.

If the cauliflower is too dry at this point, add a little bit of water.

In a separate bot, bring the water from the cauliflower to a boil. When the water is boiling, add the salt, and the pasta. Cook it al dente.

Drain the pasta and pour it over the cauliflower mix.

Saute everything on medium heat and transfer in a serving plate.

Bring the parmigiano reggiano to the table and serve
