Lentil Soup

Nothing better than a nice warm lentil soup during the cold winter day

Ingredients
8 to 10 cups of water
2 cups Lentils (rinsed and washer)
2 stalk of Celery
One Carrot
1 small Onion
Parsley
Extra virgin olive oil
2 cloves of Garlic
3/4 of a cup of Italian crushed Tomatoes
1 cube of Vegetable Bouillon
1/2 package Spaghetti or small cut pasta.

Preparation
Put the water in a pan
Cut 1 stalk of celery and the carrot in half and add them to the water
Cut the onion and the parsely in large pieces and add them to the water
Bring it all to a boil
Add the washed and rinsed lentils to the pan
Cook it aldente.
Drain the lentils and set them apart. Save the lentil water on a side as well.
In another pan, put the oil and the garlic.
Let it cook for half a minute
Add the tomatoes, 1 stalk of celery, salt and pepper to the pan.
Cook for 10 minutes
When it is done, remove the garlic and the celery from the pan.
Add the drained lentils to the sauce.
Add the water from the lentils to the sauce.
Cook until the lentils are tender, but not mushy.
In another pan, bring water to boil to cook the pasta
Break the spaghetti in 1 or 2 inch long or use small cut pasta
When the water is boiling, add the pasta
Cook the pasta aldente
Drain the pasta and add it to the lentils
Boil all toghether for 1 minute
Serve it warm.
