Insalata di Patate all’Italiana (Italian Potato Salad)

Italian Potato Salad

Serving: 4 people


2 pounds Potato russel or yogon potato

2 clove of Garlic chopped

2 tbs chopped Parsely

Extra Virgin Olive Oil




Bring a pot to a boil. Add the potatoes with the skin and uncut. 

Cook for 1 hour or until they are soft.  With a fork, poke the potato. If the fork gets inside, it is ready!

Peel the potatoes.

Cut them in mediam square pieces.

Put them in a bowl,  add the chopped garlic and parsely. Add extra virgin olive oil, salt, and pepper.

Mix all very well. Put them in a plater and dust with chopped parsely.
