Green Beans in Tomato Sauce

In Italian this recipe is called Faggiolini al Pomodoro.  If you are tired of eating Green Beans boiled or steamed, you will like this recipe.

Serving: 4 people

Ingredients

1 lb Green Beans

1 cup of Tomato Sauce

3 cloves of Garlic

1 small slice Red Bell Pepper

3 large leaves Basil

small bunch Parsley

1/3 cup Extra Virgin Olive Oil

Salt

Preparation

Cut the ends of the green beans. Wash the green beans.

Bring a pot of water to boil. Once the water is boiling, add the green beans and salt. Let it boil for about 10 minutes or until tender.  Be sure not to overcook them. Once the green beans are done, drain it.  Save a little bit of the green beans water to be used later.

Let’s make the sauce.

In a pan, add the extra virgin olive on low heat. Add the whole cloves garlic and  saute it for a couple of minutes. Keep an eye on the garlic not to burn. Add the tomato sauce, the slice of red bell pepper (not cut), the parsley (not chopped), and the basil (not chopped). Let it cook for about 10 minutes.

Add the cooked Green Beans to the tomato sauce. Add a little bit of the saved green bean water to the tomatoes.

Simmer it for about 10minutes.
