Fried Zucchini Flower (Fiori di Zucchina)

Do you grow zucchini in your home  garden during the summer? I do. The zucchini is delicious and fresh, but did you know that you can also cook the zucchini flowers? This recipe will show you a simple way to cook the zucchini flower. Another option for this recipe is to stuff  the flower with a piece of anchovy and mozzarella cheese. You can also stuff the flower with prosciutto and mozzarella. It is DELIZIOSO.  Zucchini flowers are not sold in stores, so if you don’t plant zucchini in your garden, make friends with a neighbor who does it!

Ingredients

10 Zucchini Flowers
2 Eggs
4 tbl All Purpose Flour
2 tbl Water
Olive Oil
Salt
Pepper

Preparation

Pick the zucchini flower from your garden in the morning. Clean the zucchini flower by removing the little yellow stem in side the flower. If you pick them late afternoon the flower is going to be closed and you wont be able to remove the yellow stem.

Remove the little green around the flower. Also remove the stem.

Wash the flower, dry it with paper towel, and set it a side.

In a bowl, beat the egg with the salt

Add the all purpose flour, pepper, and water.

Beat all very well with a fork. You need to have a nice creamy batter. If the batter is too thick, add 1 tablespoon of water.

In a skillet, put the oil let it get hot.

Put the zucchini flower in the batter 3 at a time.

Coat the zucchini flower very well.

Fry them on both sides for 3 minutes or until golden light brown.

Drain the flower on a kitchen towel.

Serve immediately.

I love cooking zucchini flowers, but gave up my veggie garden for a space for my daughter’s swingset. I have to plant some next year, even if it is in planters.

I never thought to put anchovie in them. Maybe I will try adding a little paste to my filling next year.
