Cold Pasta (Pasta Fredda)

This is my favorite summer pasta dish. Easy and Simple. Enjoy it!


1 pound Pasta (Penne or Fusilli)
2 cups grape Tomatoes
3 fresh Mozzarella cheese
lots of Basil
Extra Virgin Olive Oil


Boil a pot of water. Once the water is boiling add salt and the pasta.

While the pasta is cooking, add the grape tomatoes, mozzarella cheese, basil and olive oil to a bowl.

Once the pasta is cooked al dente, add it to the bowl.

Mix it is all together

Refrigerate it for about 3 hours before serving

Drizzle with extra virgin olive oil and basil leaves.
