Cabbage with Beans

This recipe is a healthy side dish. It goes well with with pork or any meat. I have also served this side dish with chicken cutlets.

Serving: 6 people

Ingredients

2 heads Green Cabbage

2 cans (30 oz)  Cannellini Beans

2 cloves Garlic

1 tsp Crushed Red Pepper (optional)

2 oz Extra Virgin Olive Oil

Salt

Pepper

Preparation

Bring water to a boil. Cut the cabbage and add it to the boiling water. Let it boil for 10 minutes. In the mean time, add the extra virgin olive oil to a pan, add the garlic, and let it get hot for about 1 minute. Add the crushed red pepper.

Drain the cabbage and save 1 cup of the water.

Add the cabbage to the extra virgin and garlic. Saute for 5 minutes.

Drain the beans and added to the cabbage.

Add salt and pepper to taste.

If the cabbage is too dry, add 1/2 of the saved water from the cabbage.

Stir all together and let it cook for 5 minutes.

Remove the garlic from the cabbage and it is ready to be served.

This recipe should not been too watery or dry. The consistency should be moist. If you would like to garnish the platter, you can sprinkle with a little bit of chives, and a drizzle of extra virgin olive oil.
