Penne Pasta with Salmon (cream sauce)

No words to describe this pasta dish. It is absolutely delicious! This dish was a creation of my daughter, Antonella.

Serving: 4 people

Ingredients:

10 oz Smoked Salmon sliced

1 large sweet onion diced

3 medium red peppers diced

4 TBSP of extra virgin olive oil  (EVOO) plus more as needed

1 lb of Penne Pasta

2 cups of heavy whipping cream

Salt and pepper to taste

Preparation:

Heat the EVOO in a deep saute pan and add the diced onion.  Saute  onions for approximately 3-5 minutes until soft.  Add the red peppers, cover and allow this to cook approximately 30 minutes on medium heat.    In the meanwhile, boil the water  for the pasta.   Add the salmon to the onions and peppers and simmer on  low heat.    Cook for approximately 5 minutes.  Add the cream and cook on very low heat.   Cook for an additional  10 minutes.   When the pasta is al dente, drain and add to the sauce.  Stir everything together and place on serving dish with garnish of parsley.

The Pennette al Salmone is a typical dish at weddings in Italy. I remember when I was in Italy eating this dish with a nice Sangiovese Rose’. The Sangiovese wine has a crisp bouquet with characteristic sense of roses. At the palate is quiet refreshing and it shows light plums and cherries nuances.
