Insalata di Mele e Carote

Green Apple and Carrot Salad

This salad is very refreshing. A good low fat option for lunch.

Serving: 6 people


6 green apples 

2 cups machstick carrots

6 oz  fresh lemon juce 

2 oz extra virgin olive oil

1 tsp salt

1/4  tsp pepper

1 handfull raisins

1 handfull dry cranberry or fresh pomogranete

4 dry apricut diced

4 oz orange juice (optional)

2 tbsp chopped walnuts (optional)


Slice the apples very thin. Add the slided apple to the bowl and pour the lemon juice right away. Add the carrots, add salt, pepper, extra virgin olive oil, and orange juice if desired. Toss all very well and let it chill for 1 hour before serving. Transfer the salad to a platter and top it with the dry fruits. Add the walnuts if desired.
